ELI5: Why does Nintendo always pull this artificial scarcity stuff?

First, the NES Classic, a glorified Raspberry Pi with 30+ year old software – totally sold out everywhere – now with the Zelda Master Edition – how hard is it to produce more plastic sword statues?

Is it that their stock goes up more when there's a buzz due to more demand than supply?

Would the revenues from selling these things to all the people that want one not make up for that? What is it?
